Baked Strawberry Cheesecake

Ingredients

Base:
200 g biscuits (shortbread)
100 g butter
Filling:
600 g cream cheese
200 g low fat quark
150 g cream
180 g sugar
3 tbs cornflour
1 egg
2 tsp lemon juice
200 g strawberries to top
strawberry jam for the glaze

Instructions

  1. Grind the biscuits, mix with melted butter, press into a lined baking dish and refrigerate for 10 min.
  2. Preheat oven to 160°C, 320°F or gas 3.
  3. Combine cream cheese, quark, cream, sugar, cornflour, egg and lemon juice and gently whisk until creamy.
  4. Spread over the cheesecake base and bake for 45 min.
  5. Allow to cool.
  6. Slice strawberries, warm and sieve the jam, and use to decorate the cake.
  7. Refrigerate for at least 4 hours.
