Banana and Coconut Muffins

Servings: 12

Ingredients

100 g butter (at room temperature)
150 g sugar
2 eggs
200 g flour
1 tsp baking powder
125 ml milk
2 ripe bananas
70 g coconut flakes
muffin pans
icing sugar

Instructions

  1. Preheat oven to 175°C, 345°F or gas 4.
  2. Peel the bananas and mash with a fork.
  3. Add all ingredients to a bowl and combine using a hand mixer.
  4. Spoon into the muffin pans.
  5. Nuts may be folded in here if desired.
  6. Bake for around 20-25 minutes until a light golden brown.
  7. Dust with icing sugar.
