Black Forest Gâteau

Ingredients

1 chocolate sponge (will be cut into 3 layers)
800 ml whipping cream
2 tbs sugar
1 jar or tin of black cherries
12 tbs cherry juice
1 tsp vanilla essence
1 tbs kirschwasser (or cherry brandy or liqueur)
3 1/2 tbs custard powder
1 tbs cocoa
Chocolate hail
12 glacé cherries

Instructions

  1. Cut the sponge horizontally into 3 layers.
  2. Whip the cream and add sugar.
  3. Put the black cherries in a pot.
  4. Mix the cherry juice with the kirschwasser, custard powder and cocoa, then add to the pot. Cook until thick and allow to cool.
  5. Place the first sponge layer in a cake ring.
  6. Spread the cherry mixture on top.
  7. Add another sponge layer.
  8. Spread the whipped cream on top but save a little for later.
  9. Lay the final sponge layer on top and cover with the rest of the cream.
  10. Decorate with chocolate hail and glacé cherries.
