Chicken Salad with Yoghurt Dressing and Garlic Croutons

Servings: 4

Ingredients

150 ml yoghurt
2 tbs sunflower oil
2 tbs aromatic vinegar
2 tsp Dijon mustard
1/2 crushed garlic clove
1 tsp herbs (e.g. parsley, chives)
300 g chicken
1 tbs olive oil
salt and pepper
4 eggs
200 g ciabatta
1 garlic clove
lettuce
2 tomatoes

Instructions

  1. To make the dressing, mix together yoghurt, sunflower oil, vinegar, mustard, crushed garlic and herbs. Add salt and pepper to taste.
  2. Wash and salt the chicken.
  3. Sear in a pan with oil, cut into strips and season with pepper.
  4. Hard-boil the eggs, peel and quarter.
  5. Cut the ciabatta into slices.
  6. Toast the bread in the middle rung of the oven for 3 minutes at 200°C, 390°F or gas 7 until light brown.
  7. Rub the garlic clove into the bread and then cut into cubes.
  8. Wash and tear the lettuce.
  9. Quarter the tomatoes.
  10. Toss everything together.
