Claypot Chicken

Ingredients

1 chicken
sea salt and pepper
thyme
rosemary
3 cloves of garlic
1 lemon
2 tbs olive oil

Instructions

  1. Leave the claypot in cold water for 30 min.
  2. Wash the chicken, pat dry and rub with salt and pepper.
  3. Stuff the chicken with thyme, rosemary, garlic and 2 slices of lemon.
  4. Make a few incisions in the chicken and poke thyme inside the cuts. Place the chicken in the claypot, cover in oil and put the lid on.
  5. Roast in a non-preheated oven at 225°C, 440°F or gas 7 for 45 min. Remove the lid and then roast at 180°C, 350°F or gas 4 for another 45 min. or until the chicken is crispy enough.
