Egg and Avocado Sandwiches

Ingredients

4 eggs
2 avocados
1/2 lemon, squeezed
1 tbs cream cheese
2 tbs mayonnaise
salt and pepper
8 slices of toast bread

Instructions

  1. Boil the eggs for 10 min. until hard, peel and dice.
  2. Peel and pit the avocados.
  3. Mash the avocados in a bowl with a fork.
  4. Stir in the lemon juice, eggs, cream cheese and mayonnaise.
  5. Add salt and pepper to taste.
  6. Spread the mixture between two slices of bread.
