Grilled Aubergine

Servings: 4

Ingredients

2 aubergines
1 tomato
1 mozzarella ball
4 olives
salt and pepper

Instructions

  1. Cut the aubergine into slices no thicker than 1 cm (they will cook faster if thinner).
  2. Salt well and leave for 30 min. to absorb the salt. Wash the salt off and pat dry with a paper towel. This will remove any bitterness.
  3. Preheat oven to 200°C, 390°F or gas 6.
  4. Lightly cook the aubergines in a pan until they take on a little colour, and lay them on a baking tray.
  5. Dice tomatoes, mozzarella and olives and spread over the aubergine slices.
  6. Season with salt and pepper.
  7. Preheat oven to 200°C, 390°F or gas 6, and bake until all are cooked through and the cheese has melted (around 10 min.) or alternatively cook on a bbq.
