Honey and Lime Chicken Skewers

Servings: 2

Ingredients

1 tbs olive oil
3 tbs soy sauce
5 tbs honey
2 limes
4 cloves of garlic
1 cm fresh ginger
2 tbs sambal oelek
1 tsp salt
200 g chicken thighs
1 small red chilli
1 tbs coriander leaves
wooden skewers

Instructions

  1. Blend oil, soy sauce, honey, 2 tbs lime juice, peeled garlic, peeled ginger, sambal oelek and salt in a food processor.
  2. Cut the chicken into bite-sized portion and marinate in half of the sauce for at least 6 hours in the refrigerator.
  3. Soak the skewers briefly in water.
  4. Stick the chicken on the skewers.
  5. Cook until golden brown on the barbecue or in a pan.
  6. Garnish with the rest of the sauce, chopped coriander leaves, chopped chilli and slices of lime.
