Salmon and Spinach Lasagne

Cook Time: 30 mins

Servings: 4

Ingredients

1 bag frozen chopped spinach, or spinach purée
1 bag loose leaf spinach
400 g salmon fillets
8 lasagne sheets
2 cups crème fraîche
300 g grated cheese
salt, pepper
1 crushed garlic clove

Instructions

  1. Defrost the spinach in a saucepan on a low heat and season with salt, pepper and garlic.
  2. Preheat oven to 180°C, 350°F or gas 4.
  3. Cut the salmon into pieces.
  4. Place a layer of lasagne sheets in a casserole dish.
  5. Alternate the lasagne sheets with layers of salmon/spinach mixture and fill the dish.
  6. The top layer should be lasagne sheets. Cover the top with crème fraîche and cheese.
  7. Cook for around 30 min. at 180°C, 350°F or gas 4.
