Tomato Tapenade

Ingredients

125 g sundried tomatoes
150 ml olive oil (just over 1/2 cup)
1 clove of garlic
100 g macadamia nuts, roasted and salted
1/2 bunch of basil
3 tbs parmesan, freshly grated
1 tbs balsamic vinegar
a pinch of cayenne pepper
1 ciabatta bread

Instructions

  1. Quarter the tomatoes, place in the oil and marinate for 10 hours.
  2. Purée the tomatoes, garlic, nuts and basil leaves in a blender.
  3. Add vinegar, cayenne pepper and parmesan.
  4. If you'd like to keep the tapenade for a longer period of time, it can be kept in a preserving jar, topped with a bit of oil and stored in the refrigerator.
