Asparagus Pastry Rolls

Ingredients

600 g asparagus
salt
1 lemon
2 sheets of puff pastry
10 slices of ham or bacon
2 eggs
butter

Instructions

  1. Remove the woody ends from the asparagus.
  2. Cook in water with a pinch of salt and a slice of lemon for 7 min. until tender but firm to the bite.
  3. Cut the pastry into 5 cm wide strips.
  4. Brush with whisked egg and cover with ham.
  5. Roll 3 asparagus spears in each one.
  6. Brush with melted butter.
  7. Preheat oven to 170°C, 340°F or gas 3 and bake for around 5 min. until cooked.
