Bruschetta with Sundried Tomatoes

Ingredients

250 g sundried tomatoes
200 g feta
10 olives
3 cloves of garlic
6 tbs olive oil
salt and pepper
1 ciabatta bread
1 bunch of basil

Instructions

  1. Cut the tomatoes into small pieces, dice the feta and olives, and crush 2 cloves of garlic. Mix all together with olive oil, salt and pepper and leave to marinate for 15 min.
  2. Rub 1 crushed clove of garlic into the ciabatta, lightly drizzle with oil and toast in the oven at 200°C, 390°F or gas 6 for 7 min.
  3. Spread the mixture over the bread, top with basil and serve immediately.
