Cream of Asparagus Soup

Ingredients

500 g asparagus
750 ml water (3 cups)
4 tbs flour
50 g butter
1 tbs vegetable stock
150 ml cream (1/2 cup 5 tsp)
1 egg yolk
salt and pepper
sugar
croutons

Instructions

  1. Wash the asparagus and cut the stalks into pieces.
  2. Place the asparagus pieces in boiling water with a pinch of sugar and salt.
  3. After 15 min., drain the asparagus in a sieve, retaining the water.
  4. Cook the flour in the butter and carefully add the asparagus water while stirring.
  5. Add the vegetable stock.
  6. Briefly bring to the boil.
  7. Whisk the cream and egg yolk, stir in, and simmer for 2 min. while stirring.
  8. Season with salt and pepper.
  9. Serve with croutons and the asparagus tips.
