Profiteroles

Ingredients

250 ml water
50 g butter
150 g flour
4 eggs
400 ml whipping cream
1 tbs sugar
1 tsp vanilla essence
icing sugar

Instructions

  1. Bring water and butter to boil in a pan.
  2. Using a cooking spoon, stir in the flour.
  3. Stirring continuously with low heat until lumps of dough emerge.
  4. Allow to cool.
  5. Whisk the eggs and gradually beat into the dough.
  6. Place individual teaspoon-sized mounds on a lined baking sheet, ensuring they are well-spaced.
  7. Bake at 200°C, 390°F or gas 6 for around 20-30 min. until golden brown.
  8. Allow to cool before cutting in half.
  9. Whip the cream with sugar and vanilla and fill the profiteroles.
  10. Dust with icing sugar to finish.
