Cream of Courgette Soup

Servings: 4

Ingredients

2 potatoes
1 kg courgettes
1 onion
1 l vegetable stock
1 clove of garlic
150 ml cream (just over 1/2 cup)
parsley
salt, pepper

Instructions

  1. Peel the potatoes and courgettes.
  2. Dice the potatoes, courgettes and onion.
  3. Bring the vegetable stock to the boil, add the vegetables and cook for 15 min.
  4. Add crushed garlic.
  5. As soon as the vegetables are soft, purée with a stick blender.
  6. Add cream, chopped parsley, salt and pepper and briefly bring to the boil once more.
  7. Garnish with a bit of the courgette peel.
