Chicken Ragout with Gorgonzola and Rice

Servings: 4

Ingredients

750 g chicken breast
2 onions
2 cloves of garlic
2 tbs oil
300 ml vegetable stock (1 cup 5 tsp)
150 ml cream (just over 1/2 cup)
200 g Gorgonzola
50 g pine nuts, roasted
rice

Instructions

  1. Cut the onions and garlic into fine pieces.
  2. Cut the chicken into strips.
  3. Fry the chicken in oil.
  4. Add the onions and garlic and fry likewise. Season everything with salt and pepper.
  5. Deglaze with the vegetable stock and reduce for 12 min.
  6. Blend the cream and Gorgonzola in a mixer, add to the pan and simmer for another 3 min.
  7. Add the pine nuts and serve with rice.
