Crispy Thai Fried Pork

Ingredients

500 g lean pork
1 garlic bulb
1 tsp ground coriander
1 tsp Thai pepper
2 tsp cornflour
1 tbs thin soy sauce
2 tbs fish sauce
1 tsp sugar
1 tsp sesame oil
1 cucumber, 1 tomato, lettuce

Instructions

  1. Cut the pork into bite-sized portions.
  2. Crush half the garlic bulb in a mortar.
  3. Mix in the coriander, pepper, cornflour, soy sauce, fish sauce, sugar and sesame oil.
  4. Marinate the pork in the mixture for 2 hours in the refrigerator.
  5. Fry the pork in a wok with a little oil and set to one side, removing any pieces of garlic still in the oil.
  6. Chop the other half of the garlic bulb into fine pieces and lightly fry in oil, remove and dry on a paper towel.
  7. Sprinkle the meat with the garlic pieces and serve with the salad.
