Kiwifruit Layer Cake

Ingredients

Cake:
100 g flour
1 1/2 tsp baking powder
100 g sugar
4 eggs
4 tbs oil
1 tbs water
Filling:
400 ml cream
1 tsp vanilla essence
200 ml crème fraîche
gelatine
5 kiwifruit

Instructions

  1. Whisk flour, baking powder, sugar, eggs, oil and water in a bowl until fluffy.
  2. Pour into a lined springform cake tin.
  3. Bake at 200°C, 390°F or gas 6 for 15 min.
  4. Allow to cool slowly.
  5. Whip cream with sugar and stir in the crème fraîche.
  6. Prepare enough gelatine for this 600 ml mixture and stir in.
  7. Spread the mixture on the cake in the tin and refrigerate for at least 4 hours.
  8. Blanch the kiwifruit by putting them whole and unpeeled into boiling water for 25 seconds. Remove and chill with cold water, peel, slice into rounds and lay on the cake.
