Bee Sting Cake

Ingredients

Cake:
200 g sugar
1 tsp vanilla essence
5 eggs
100 g flour
2 tsp baking powder
100 g flaked almonds
Filling:
3 1/2 tbs custard powder
1 tsp vanilla essence
400 ml cream
1/2 tbs sugar
2 sheets of leaf gelatine

Instructions

  1. Whisk sugar, vanilla, and eggs for 3 minutes until fluffy.
  2. Sift in the flour and baking powder, stir and transfer quickly to a greased springform cake tin.
  3. Lightly roast the almond flakes in a pan.
  4. Sprinkle the almonds over the cake mixture.
  5. Bake for around 30 min. at 175°C, 350°F or gas 4. If the almonds start to brown, cover with baking paper or foil. Check with a skewer every now and then to see if done.
  6. Allow to cool slowly.
  7. Whip together the sifted custard powder, vanilla, cream and sugar.
  8. Prepare gelatine according to the instructions and add.
  9. When cool, slice cake in half horizontally.
  10. Place the lower half in a cake ring, spread with the filling and lay the upper half on top.
  11. Refrigerate for at least 2 hours.
