Lamb Burritos

Servings: 4

Ingredients

Lamb:
500 g lamb neck
4 tbs olive oil
2 tsp oregano
2 tsp dried marjoram
2 tsp dried thyme
1 tsp cumin
1 tsp coriander
1 tsp paprika
1 tsp cayenne pepper
2 garlic cloves
1 red onion, finely chopped
Sauce:
1/3 cucumber
350 g quark
1 garlic clove
1 tbs olive oil
2 tsp lemon juice
1 tbs parsley
salt and pepper
The rest:
2 cups rice
250 g beans
4 tortillas

Instructions

  1. Cut the meat into thin slices and marinate in the lamb spice blend for at least 2 hours.
  2. Fry meat in a pan with oil.
  3. To make the sauce, grate the cucumber and mix with the other sauce ingredients.
  4. Cook the rice and beans.
  5. Wrap a bit of everything inside the tortillas.
