Mascarpone and Pomegranate Cream Parfait

Servings: 4

Ingredients

1 vanilla pod
500 g mascarpone
100 ml cream
75 g sugar
100 g amaretti biscuits
1 pomegranate

Instructions

  1. Slice open the vanilla pod and scrape out the seeds.
  2. Mix together the mascarpone, cream, sugar and vanilla seeds.
  3. Crush or smash the biscuits into coarse crumbs (perhaps inside a plastic bag).
  4. Remove the pomegranate seeds.
  5. Fill four dessert glasses with layers of biscuit crumbs, cream mixture, biscuit crumbs, cream mixture and top with pomegranate seeds.
