Mayonnaise

Ingredients

1 fresh egg yolk
1 tsp mustard
1/2 tsp vinegar
a pinch of salt
150-200 ml vegetable oil

Instructions

  1. Take all the ingredients out of the refrigerator. They should be at room temperature.
  2. Put the yolk in a bowl.
  3. Add the mustard, vinegar and salt and whisk.
  4. Add the oil drop by drop to start with, stirring well with a whisk (or blending) until all is stirred in.
  5. The mayonnaise will get stiffer as you add more oil.
  6. Adding more water will make the mayonnaise more fluid again if you find it too stiff.
  7. Alternatively, 1 tsp lemon juice can be used in place of the vinegar. A finely chopped garlic clove can also be mixed in (the mayonnaise should then be refrigerated for 1 hour for the flavour to infuse).
