Fried Anchovies with Aioli

Ingredients

500 g anchovies
1 tsp sea salt
1 cup flour
3 cups cooking oil
1 egg
1 tbs vinegar
1 tsp sugar
1/2 tsp salt
1 tsp mustard
3 cloves of garlic
250 ml rapeseed oil (1 cup)

Instructions

  1. Twist off the heads of the anchovies, removing the insides as you do.
  2. Wash and the anchovies and drip-drain.
  3. Mix the sea salt and flour in a bag.
  4. Coat the anchovies in flour in the bag.
  5. Fry each portion for 3-5 min.
  6. Take all the aioli ingredients out of the refrigerator. They should be at room temperature.
  7. Blend the egg, vinegar, sugar, salt, mustard and garlic in a food processor.
  8. Add the oil drop by drop to start with, stirring well with a whisk (or blending).
  9. Later, you can add more oil, but keep stirring constantly until the aioli becomes stiff.
