Mussels in White Wine

Preparation Time : 30 mins

Servings: 4

Ingredients

1.5 kg mussels
2 cloves of garlic
2 onions
1 small carrot
1 tbs butter
1/4 tsp cayenne pepper
1 bay leaf
350 ml dry white wine (1 cup 6 tbs 2 tsp)

Instructions

  1. Wash the shellfish, discarding all broken and open mussels.
  2. Cut the garlic and onions into small pieces.
  3. Dice the carrot.
  4. Heat butter in a large saucepan and sauté the carrot, garlic and onions.
  5. Add cayenne pepper and the bay leaf.
  6. Lightly sweat everything, deglaze with white wine and bring to the boil.
  7. Add the mussels, cover the pot and cook for 15 min. until the shells open.
  8. Discard the closed mussels and then serve.
