Trout Fillets in Herb Butter

Ingredients

4 trout fillets
120 g butter
2 cloves of garlic
1 tbs tarragon
2 tbs parsley
2 lemons
3 tbs white wine
pepper
salt
cayenne pepper
Worcestershire sauce

Instructions

  1. Make herb butter by creaming the butter with the herbs, zest of 1 lemon and crushed garlic.
  2. Stir in the white wine and season with pepper, salt, cayenne pepper and Worcestershire sauce.
  3. Spread plain butter in the middle of a sheet of baking foil and lay the trout on the butter skin side down.
  4. Spread the herb butter over the trout and fold the foil around it, ensuring that it is airtight.
  5. Cook on a hot barbecue or in the oven. Heat until the foil balloons, then wait a few more minutes before removing from the barbecue or oven.
  6. Garnish with lemon slices and serve with wine and baguette.
