Oven-Baked Chicken Nuggets

Ingredients

1 kg chicken breasts
breadcrumbs (4 cups unsweetened cornflakes may be better)
2 cups flour
salt and pepper
2 eggs
oil

Instructions

  1. Preheat oven to 200°C, 390°F or gas 6.
  2. Cut chicken breasts into bite-sized portions.
  3. Add breadcrumbs to a bowl. If using cornflakes, crumble them first.
  4. Season the flour with salt and pepper in another bowl.
  5. Whisk the eggs in a separate bowl.
  6. Dunk the chicken pieces first in the flour, then in the egg and lastly in the breadcrumbs, ensuring they are well coated.
  7. Place the nuggets on an oven tray lightly greased with oil.
  8. Bake for 30 minutes, turning over after the first 15 minutes.
