Pappardelle with Porcini Mushrooms

Ingredients

10 g dried porcini
250 ml cream (1 cup)
250 g pappardelle
Parmesan, freshly grated
salt
pepper

Instructions

  1. Cook the pasta.
  2. Dice the mushrooms and soak in warm water for 1 hour to soften.
  3. Drain the mushrooms and cook in cream until reduced by half.
  4. Season with salt and pepper.
  5. Mix with the pasta and serve with Parmesan.
