Potato Soup

Servings: 4

Ingredients

2 shallots
50 g bacon
25 g butter
200 g potatoes
500 ml vegetable stock (2 cups)
300 ml cream (1 cup 3 tbs 1 tsp)
salt
nutmeg
chives

Instructions

  1. Dice the shallots and bacon and fry both in a pot with the butter.
  2. Peel and dice the potatoes and add.
  3. Add the stock and boil for 20 min. until the potatoes are cooked.
  4. Add the cream and purée with a stick blender.
  5. Add salt and nutmeg to taste and garnish with chives.
