Radish Salad

Servings: 4

Ingredients

any salad greens (or mixed greens, e.g. baby spinach and iceberg lettuce)
1 bunch of radishes
1 onion
1/2 tbs mustard
1 egg yolk
100 ml oil (sunflower or rapeseed)
40 ml water
50 ml vinegar (tarragon vinegar)
1 tsp sugar
1 tbs lemon juice
1/2 bunch of parsley, chopped
cayenne pepper
white pepper
salt
garlic seasoning

Instructions

  1. Wash and tear the lettuce.
  2. Remove the ends from the radishes and slice.
  3. Thinly slice the onion.
  4. Mix the mustard and egg yolk in a bowl, and then gradually add the oil, water and vinegar.
  5. Next add sugar, lemon juice, parsley and seasoning.
  6. Toss everything together and serve.
