Ratatouille

Ingredients

1 onion
2 cloves of garlic
1 courgette
3 peppers (green, yellow, red)
1 aubergine
2 tomatoes
2 tbs sugar
thyme
salt and pepper
oil

Instructions

  1. Finely dice the onion and garlic.
  2. Wash the vegetables and cut into bite-sized portions.
  3. Cook the onion and garlic with the courgette in a pan.
  4. Add the peppers and cook.
  5. Add the aubergine and cook.
  6. Add peeled tomatoes.
  7. Season with salt, pepper, sugar and thyme.
  8. Simmer on a medium heat for 20 min. The vegetables should still be a little firm.
