Rocket Pesto Spaghetti

Ingredients

500 g spaghetti
1 tomato
1 bag rocket
30 g pine nuts, roasted
2 cloves of garlic
30 g Parmesan
olive oil
pepper
salt

Instructions

  1. For the pesto, combine rocket, pine nuts, garlic and Parmesan in a blender, adding olive oil towards the end.
  2. Add salt and pepper to taste.
  3. Cook the spaghetti and serve with the pesto and chopped tomatoes.
