Spinach and Mozzarella Pizza

Ingredients

380 g flour
7 g salt
1 tbs olive oil
16 g yeast (1 tbs)
200 ml lukewarm water
7 tbs tomato purée
150 g spinach (frozen)
50 g gorgonzola
200 g mozzarella
1 onion
2 cloves of garlic
salt
pepper
oregano
olive oil

Instructions

  1. Dissolve the yeast in a little water
  2. For the dough, mix flour, salt, olive oil, yeast and water in a bowl.
  3. Knead the dough until smooth and pliable (by hand or in a mixer).
  4. Cover and leave until double in size (around 2 hours).
  5. Dice the onion and garlic and simmer in a pot with tomatoes and oregano on a medium heat.
  6. Add finely chopped spinach and sauté for 5 min.
  7. Line or grease a baking sheet.
  8. Roll the dough out with a rolling pin.
  9. Transfer the dough to the baking sheet.
  10. Spread the sauce and other toppings on the dough.
  11. Bake on the lower oven rung preheated at 220°C, 430°F or gas 7 for 15-20 min.
