Spinach, Egg and Sesame Salad

Ingredients

8 eggs
4 handfuls of young spinach
1 avocado
1 tbs peanut oil
2 tsp dark sesame oil
1 tbs soy sauce
1 tbs lime juice
1 tsp white balsamic vinegar
1/2 tsp wasabi (horseradish)
1 tbs toasted sesame seeds

Instructions

  1. Cook, peel and halve the eggs.
  2. Wash the spinach, remove the stalks and cut into strips.
  3. Peel, pit and dice the avocado.
  4. Combine remaining ingredients to make the dressing and pour over the salad.
