Tuna and Chickpea Salad

Servings: 2

Ingredients

salad greens (e.g. rocket or baby spinach)
1 small tin of chickpeas
2 tomatoes
1 cucumber
1 onion
1 tin of tuna
50 ml balsamic vinegar
100 ml olive oil
salt, pepper and sugar
1 tsp mustard

Instructions

  1. Drain the chickpeas in a sieve and rinse.
  2. Wash the salad greens.
  3. Cut the tomatoes into quarters.
  4. Thinly slice the cucumber and onion.
  5. Break up the tuna.
  6. Mix balsamic vinegar, olive oil and seasoning to make the dressing.
  7. Toss everything together and serve.
