Thai Satay Skewers

Ingredients

800 g chicken breasts
small wooden skewers
2 tbs soy sauce
1 tsp turmeric
3 cloves of garlic
2 cm fresh ginger
1 red chilli
2 tbs lime juice
1 onion
175 g peanuts, roasted, unsalted
400 ml coconut milk
2 tsp curry powder
2 tbs brown sugar
1/2 tsp cumin
peanut oil

Instructions

  1. For the marinade, mix 1 garlic clove, turmeric, 1 cm ginger, 1/2 the finely cut chilli pepper, 1 tbs lime juice and 2 tbs soy sauce.
  2. Cut the chicken into strips 2 cm thick, skewer on the sticks and marinate for 3 or more hours. The longer, the better.
  3. For the sauce, finely chop the onion, 2 garlic cloves, 1 cm ginger and 1/2 the chilli pepper and fry in a pan with oil.
  4. Finely chop the peanuts and add to the pan along with curry powder, cumin, sugar and coconut milk.
  5. Simmer for around 5 min. until the sauce thickens and then add 1 tbs lime juice.
  6. Briefly blitz with a stick blender.
  7. Cook the skewers on the barbecue, in a pan or in the oven at 200°C, 390°F or gas 6 for around 15 min. and then serve with the sauce.
