Asparagus and Salmon Quiche

Servings: 4

Ingredients

4 sheets puff pastry (can be defrosted from the freezer)
1 bunch of spring onions
100 g salmon, salmon fillets or smoked salmon
6 asparagus spears
2 eggs
200 ml cream (just over 3/4 cup)
salt and pepper
nutmeg
5 tbs grated cheese (e.g. cheddar)

Instructions

  1. Grease a quiche dish with oil and line with puff pastry (including the sides).
  2. Slice the spring onions into fine rings.
  3. Cut the salmon into strips.
  4. Blanch the asparagus and then cut into 2 cm pieces.
  5. Whisk the eggs, add cream and season with salt, pepper and nutmeg.
  6. Put everything in the quiche dish and top with grated cheese.
  7. Preheat oven to 200°C, 390°F or gas 6 and bake on the lowest shelf at 30-40 min.
