Zucchini Pasta

Servings: 4

Ingredients

3 zucchini
2 spring onions
2 tbs butter
200 ml cream
salt and pepper
50 g pine nuts
your choice of herbs
salt, pepper and nutmeg
500 g pasta (e.g. rigatoni)
grated parmesan

Instructions

  1. Wash the zucchini, half lengthwise and slice thinly.
  2. Slice the onion into fine rings.
  3. Sauté both in a pan with butter.
  4. Add the pine nuts and toast quickly.
  5. Add cream and reduce a little.
  6. Add salt, pepper, nutmeg and herbs to taste.
  7. Cook the pasta and serve with the sauce and parmesan.
