Beef Carpaccio

Ingredients

100 g pine nuts
rocket
balsamic vinegar
500 g beef fillet (or roast beef), extremely thin slices, top quality for Carpaccio
1 piece of Parmesan, freshly grated
2 lemons
sea salt
pepper
olive oil
baguette

Instructions

  1. Lightly toast the pine nuts in a pan.
  2. Wash the rocket leaves.
  3. Drizzle a thin layer of balsamic vinegar over four plates. Preferably, use a pastry brush to spread the vinegar.
  4. Lay out beef slices, rocket and pine nuts on the plates and sprinkle the Parmesan on top.
  5. Season with the lemon juice, salt and pepper and add olive oil and balsamic vinegar on top.
  6. Serve immediately with baguette.
