Beef Roulades in White Wine Sauce

Servings: 4

Ingredients

8 beef roulades
salt, pepper and ground paprika
2 tsp hot mustard
8 rashers of bacon
1 leek
2 carrots
2 tomatoes
toothpicks
4 tsp olive oil
1 bottle white wine
1 vegetable stock cube
8 potatoes, cooked
chives

Instructions

  1. Season the roulades on both sides with salt, pepper and paprika.
  2. Brush the inner sides with mustard and lay 2 bacon rashers on each roulade.
  3. Finely dice the leek, carrots and tomatoes and spread over the roulades.
  4. Roll the roulades up and affix each one with two toothpicks.
  5. Cook in a pot with oil.
  6. Add as much white wine as needed until only half of the roulades are showing.
  7. Additional seasonings can be added if desired.
  8. Add the stock cube and cover.
  9. Simmer on a low heat for about 1 hour. While this is happening, cook the potatoes.
  10. Add salt to the sauce to taste.
  11. Serve with potatoes and chives.
