Carrot Cake

Ingredients

6 eggs
1 tsp cinnamon
250 g sugar
250 g grated carrot
lemon zest
a pinch of salt
250 g ground almonds
50 g wholemeal flour
2 tsp baking powder
oil or butter to grease
icing sugar to finish

Instructions

  1. Separate the eggs.
  2. Whisk yolks, cinnamon and 200 g sugar until fluffy.
  3. Fold in the grated carrot.
  4. Add all remaining ingredients except for the egg white.
  5. Beat the whites and fold in.
  6. Transfer to a lined or greased cake tin and bake at 180°C, 350°F or gas 4 for 45 min.
  7. Dust with icing sugar.
