Chicken Thai Red Curry

Ingredients

600 g chicken breasts
2 lemongrass stalks
1 red pepper
1 green pepper
1-2 tbs red curry paste
1 tbs oil
400 ml coconut milk
2 tbs lime juice
3 tbs fish sauce
1 tbs palm sugar
200 g pineapple chunks
rice

Instructions

  1. Wash the lemongrass, remove the outer leaves and upper half. Slice finely.
  2. Cut the chicken and peppers into bite-sized portions.
  3. Lightly fry the curry paste in oil.
  4. Add coconut milk and slowly bring to the boil.
  5. Add lime juice, fish sauce, lemongrass and palm sugar.
  6. Lastly, add the pineapple, pepper and chicken and cook everything for 10 min.
  7. Serve with rice.
