Chilli Chicken Sandwiches

Ingredients

200 g chicken breast
1/2 red chilli
1 tbs oil
salt
2 tomatoes
lettuce
8 basil leaves
200 g mozzarella
8 slices of toast bread

Instructions

  1. Cut the chicken into strips.
  2. Chop the chilli finely.
  3. Cook both in a pan with oil.
  4. Season with salt.
  5. Chop the tomatoes into small pieces.
  6. Chop the lettuce and basil.
  7. Slice the mozzarella into rounds.
  8. Layer lettuce, basil, tomatoes, chicken and mozzarella between two slices of bread.
  9. For best results, cook in a toasted sandwich maker.
