Cream Horns

Ingredients

pastry horn baking moulds
1 block of puff pastry (or make yourself)
4 eggs
3 tbs milk
icing sugar
450 g sugar
1 tbs lemon juice

Instructions

  1. Roll the pastry and cut into 3 cm strips.
  2. Mix 1 egg yolk with milk.
  3. Brush each strip with the mixture.
  4. Wrap each strip around a pastry horn mould in spiral direction.
  5. Set on a baking tray and brush with the yolk-milk mixture.
  6. Bake at 200°C, 390°F or gas 6 for 15 min.
  7. Remove the moulds.
  8. Combine 4 egg whites, 150 g sugar and lemon juice and beat until stiff.
  9. 300 g Zucker mit wenig Wasser bis zum „Kettenflug“ aufkochen (so lange kochen, bis man damit Seifenblasen z.B. durch eine Drahtschlinge blasen könnte) und im Eiweiss unterheben
  10. Fill the pastry horns.
  11. Dust with icing sugar to finish.
