Lemon Cake

Ingredients

300 g flour
3 tsp baking powder
3 eggs
300 g sugar
125 g butter (at room temperature)
125 ml milk
zest of 1 lemon
icing sugar

Instructions

  1. Combine flour and baking powder.
  2. Separate the eggs. Add sugar, butter, milk and egg yolk.
  3. Beat egg whites and add lemon zest.
  4. Work both together and transfer to a greased cake tin.
  5. Preheat oven to 180°C, 350°F or gas 4 and bake for 50 min.
  6. Allow to cool and dust with icing sugar to serve.
