Cream of Mushroom Soup

Servings: 4

Ingredients

300 g mushrooms (e.g white button mushrooms)
1 onion
1 clove of garlic
80 g butter
1 bunch of parsley
500 ml vegetable stock (2 cups)
100 ml milk (6 tbs 2 tsp)
30 g flour (2 tbs)
pepper
salt
nutmeg

Instructions

  1. Wash the mushrooms and cut into small pieces.
  2. Dice the onion and garlic.
  3. Fry the mushrooms, onion and garlic in a pan with half the butter.
  4. Chop the parsley and add.
  5. Put everything in a pot and heat with the vegetable stock and milk. Simmer gently.
  6. Mix the flour with the remaining butter and gradually add to thicken. Heat again.
  7. Season with salt, pepper and nutmeg and garnish with parsley.
