Cream of Potato Soup

Servings: 4

Ingredients

1 kg potatoes
1 tbs sunflower oil
2 onions
3 tbs butter
1 l vegetable stock
2 tsp fresh marjoram
125 ml cream (1/2 cup)
125 ml crème fraîche (1/2 cup)
salt, pepper, nutmeg
parsley
croutons

Instructions

  1. Peel and dice the potatoes.
  2. Cook in a pan with oil.
  3. Cut the onions into fine pieces.
  4. Melt the butter in a pot and cook the onions in the butter.
  5. Add the stock, marjoram and potatoes and cook for 20 min.
  6. Add the cream and crème fraîche and purée everything.
  7. Season with salt, pepper and nutmeg.
  8. Serve with parsley and croutons.
