Potato Salad

Ingredients

1 kg waxy potatoes
2 onions
2 tbs butter
125 ml vegetable stock (1/2 cup)
2 tsp mustard
salt and white pepper
ground caraway seeds
a pinch of sugar
4 tbs balsamic vinegar
100 g mayonnaise (1/4 cup)
chives

Instructions

  1. Cook the potatoes for 30 min. in salt water, peel and slice.
  2. Finely dice the onions.
  3. Mix melted butter, onion, stock, mustard, salt, pepper, caraway, sugar and vinegar together in a bowl.
  4. Stir the cooled potatoes through the mixture.
  5. Add mayonnaise.
  6. Leave to sit for 2 hours to absorb flavour, stir again and garnish with finely chopped chives.
