Spinach Soup

Cook Time: 25 mins

Servings: 4

Ingredients

300 g spinach
2 potatoes
1 onion
1 clove of garlic
2 tbs butter
750 ml vegetable stock (3 cups)
salt and nutmeg
1 cup crème fraîche
croutons

Instructions

  1. Wash the spinach if fresh. If frozen, defrost and drain.
  2. Peel and dice the potatoes.
  3. Cut the onion and garlic into fine pieces and lightly fry with the potatoes and butter in a pot.
  4. Add the spinach and stock.
  5. Simmer for 20 min.
  6. Purée the soup.
  7. Season with salt and nutmeg and serve with crème fraîche and croutons.
