Crumbed Shellfish

Ingredients

1 kg shellfish
1 bunch of parsley
1 clove of garlic
2 tbs olive oil
2 eggs
70 g breadcrumbs
3 tbs grated cheese
sea salt and pepper

Instructions

  1. Wash the shellfish and discard any open shells.
  2. Boil the shellfish in salted water for 5 min.
  3. Discard unopened shellfish.
  4. Open the rest of the shellfish completely and discard the empty shells.
  5. Whisk together the chopped parsley, garlic, oil, eggs, breadcrumbs and cheese. Add salt and pepper.
  6. Coat the shellfish in the mixture.
  7. Preheat oven to 240°C, 465°F or gas 9 and then bake the shellfish for 5 min. at 220°C, 430°F or gas 7 or heat on a bbq.
