Grilled Shellfish with Tomato Sauce

Servings: 4

Ingredients

1 kg shellfish
1 bunch of parsley
2 eggs
70 g breadcrumbs
3 tbs grated cheese
sea salt and pepper
2 tomatoes
1 dried chilli
1 clove of garlic
2 tbs olive oil

Instructions

  1. Wash the shellfish and discard any open shells.
  2. Add the shellfish to a saucepan with water and salt and boil for 5 min.
  3. Discard unopened shellfish.
  4. Open the rest of the shellfish completely and discard the empty shells.
  5. Whisk together the chopped parsley, eggs, breadcrumbs and cheese. Add salt and pepper.
  6. Dice the tomatoes and chilli, finely chop the garlic and mix with oil and a pinch of salt.
  7. Put some of both mixtures on each shellfish.
  8. Preheat oven to 240°C, 465°F or gas 9 and then bake the shellfish for 5 min. at 220°C, 430°F or gas 7.
